Paleo Mocha Almond Ice Cream The base recipe for this Paleo ice cream can be used to make other flavors, like vanilla.


1 can coconut milk
1 tablespoon cocoa powder
2 tablespoons freshly ground coffee
8 drops stevia
1/4 cup almond butter


  1. Put the coconut milk, cocoa powder, coffee, and stevia in a sauce pan and mix well.  Cook on medium low heat for 10 minutes.
  2. Take off the heat.  Stir in the almond butter, and let cool for 10 minutes.
  3. Pour in 1/2 cup bowls and freeze, or pour into an ice cream maker, following the manufacturer’s directions.

Makes 4+ servings.
