Delicious Guacamole – Use It Instead of Mayonnaise

Countdown to Fitness GuacamoleThis is my favorite guacamole recipe.  Not only use it with Mexican food, chips, and main dishes, but also use it instead of mayonnaise on sandwiches and salad dressing.  It’s delicious and healthy, too.

Tip: Use avocados slices or guacamole in place of mayonnaise to cut the calories and fat.

Guacamole

2 medium avocados coarsely chopped
1 medium tomato coarsely chopped
1/2 small onion cut up
1 tablespoon chopped serrano or jalapeño pepper
1 tablespoon snipped cilantro
1 tablespoon lemon juice

For creamy guacamole, in a blender or food processor, combine all the ingredients, cover, and blend or process till well combined, stopping machine occasionally to scrape down sides. For chunky guacamole, combine the ingredients in the machine and pulse it a few times to mix or mix by hand.

Transfer mixture to a serving bowl.  Cover and chill.  Use as a dip for chips, a topper for main dishes, salad dressing, or sandwich spread.  Makes about 1.75 cups.
